Lemon & Pesto Orzo with Pea & Sundried Tomato

- 25g butter
- 1 large red onion, chopped
- 2 cloves garlic, finely chopped
- 1 large lemon (skin on), chopped
- 1L chicken or vegetable stock
- 250g orzo pasta
- 200g frozen peas, defrosted
- 50g sun-dried tomatoes, plus 1 tbsp oil from the jar
- ¼ cup cream
- 25g parmesan, finely grated (plus extra to serve)
- 2 tbsp basil pesto (plus extra to serve)
- 1 tsp salt

There’s something about the combination of lemon and herbs that just embodies spring and this lemon & pesto orzo with pea & sundried tomato is it. - In a large saucepan, melt butter over medium heat. Add onion and garlic, and cook for 4-5 minutes, stirring occasionally, until starting to brown.
- Add lemon and cook for an additional minute. Add ½ cup water, then remove from heat and use a stick blender to blend until almost smooth.
- Meanwhile, bring stock to a boil in a large saucepan. Reduce heat to a simmer, and add orzo. Cook for 5 minutes or until al dente. Remove from heat and drain.
- Add drained orzo into the pan with the lemon sauce, along with the peas, sun-dried tomatoes and oil from the jar, parmesan, pesto and salt. Stir through, and heat until the parmesan has melted.
- Serve hot, with an additional sprinkle of parmesan and a few dollops of pesto.
