Paleo Apple Berry Crumble

- Apple/Berry Mix
- 4 apples (roughly 750g in total), peeled, cored, and cut into small pieces
- 85g honey (raw and organic) optional
- 1tbsp coconut oil
- Zest of one orange
- 1tsp ground cinnamon
- 1⁄2tsp of vanilla powder or 1 vanilla pod, split
- 320g fresh or frozen mixed berries

- Crumble Topping
- 1cup almond or hazelnut flour
- 1⁄2cup activated macadamia nuts - finely cut or blended
- 1⁄2cup activated pistachio nuts - finely cut or blended
- 1⁄2cup shredded coconut
- 2tbsp coconut oil - melted
- 85g honey (raw and organic)
- 1⁄2tsp ground cinnamon
- Pinch of sea salt
- Coconut yoghurt (optional)

There's no better 'winter warmer' than a crumble. This recipe flips the traditional crumble on its head with a Paleo twist, but don't panic! It tastes so good, you'll forget all about the fact that it's healthy. Even better... this crumble is delicious served cold the next day.
Preheat oven to 160°C.
Filling: Combine the apple, honey, coconut oil, orange zest, cinnamon, vanilla pod or powder, and water in a saucepan. Cover and cook over a low-medium heat, stirring occasionally until the apple softens. Add berries, cover, and cook for a further 3-4 minutes until the berries start to burst/ soften. Remove the vanilla pod if using.
Meanwhile, to make the crumble topping, place all the ingredients in a bowl and mix well (it helps to soften/melt the honey beforehand).
Pour the filling into a baking dish and sprinkle over the crumble topping to cover. Bake for 15 minutes or until the crumble is golden brown. Remove from the oven and allow to stand for a few minutes before serving. Serve with coconut yoghurt.
