- 3 ¼ cups Self-raising flour
- 300ml Whipped cream
- 1 cup Chilled lemonade soda
- Optional: sprinkles, edible glitter and other decorations

There is everything to love about these totally easy-peasy scones. And for those who aren’t fans of the humble lemon – no probs – these don’t taste lemony at all.
How to . . .
Step 1: Turn on the oven to 220°C bake/ fan-bake, and line a baking tray with baking paper.
Step 2: Next, place the flour in a large bowl and make a well in the centre. Stir in the lemonade and 1 cup of the cream. Then, using a flat-bladed knife mix until a soft, sticky dough forms.
Step 3: Now, remove dough from the bowl and place onto a lightly floured surface. Knead gently until just smooth – approximately 30 seconds to a minute. Roll out using your hands or rolling pin – roughly 3 cm thick – and using a pastry cutter (or carefully using a bread knife by hand) cut out 20 scones – re-roll the dough if you need to. Place the scones on the prepared tray and brush the tops with your leftover cream.
Step 4: Into the oven they go for 18-to-20 minutes – or until risen and nice and golden brown on the top (they should also sound hollow in the middle.)
Step 5: Serve warm with jam and cream, honey, Nutella, golden syrup – whatever tickles your winter fancy!
